This is one of mine and my mum’s favourite dish that John’s made for us. And this dish is very close to my heart as it was one of the very first meal that John made for me.
11 years ago while he was house sitting a friend’s house, he made this dish for dinner for the both of us. It was so good! I guess it was one of those times that I said to myself that this man is a keeper! And now we’re married and he’s still cooking this dish for me.
You can also use penne for this recipe. We used fettuccine in this instance.
Ingredients:
- Garlic, finely chopped
- Shallots, finely chopped
- Chicken breast, diced into 3cm cubes
- Bacon rashers, diced
- Snow peas, chopped into 3cm pieces
- Fresh cream
- Eggs
- Olive oil
- Parmesan
- Parsley, finely chopped
- Fettuccine

In a bowl, add eggs and cream and whisk until combine.

Cook pasta in a pan with salty boiling water until al dente. Remove and set aside.
Heat some olive oil in a heavy base pan. Brown chicken in pan until chicken is half cooked. Remove and set aside.

Add bacon to pan and brown for a couple of minutes. Remove and set aside.

Heat more oil in pan, then add shallots and garlic. Brown until fragnant. Then add the bacon, chicken and snow peas back into the pan to cook chicken completely.

Add pasta and cream mixture and stir to combine. Season well.

Divide pasta into bowls, top with parsley and served with grated parmesan.
